制作酵素守则篇(六)

这就是三星期后滤进玻璃罐的酵素。如图这罐是纯龙珠果酵素。其实真正滤出来的酵素并不多,所以真的很可贵的啊!

而这罐是龙珠果+芹菜酵素,颜色会稍微不同。不过由于两种酵素都是用冰糖而非用冰片糖,所以酿出来的酵素颜色会较浅较自然,不然颜色铁定是较深的。

滤出来的果渣,可千万别丢掉哦!滤出来的纯龙珠果果渣里,冰糖已经溶于无形当中,留下的只有龙珠果和杀菌用的柠檬片。

通常我都先将果渣打成汁来饮用,而真正的酵素则留待过后再饮用。因为果渣不能够耐太久。这是我一次用差不多一半的果渣用搅拌机打出来的果汁,滤掉渣后加入一点冰块,带着浓浓酒香的酵素饮料,好好喝呢!

老实说,用龙珠果果渣来搅拌的确有相当难度,因为它的黑黑的种籽会令过滤过程困难,不过好喝是毋庸置疑的。

虽然并非十分有卖相,因为整个饮料看起来灰灰色的,并且有黑黑一点点的东东浮浮沉沉,我还是生平头一次看到并品尝一杯灰色的饮料。龙珠果这水果真特别。

如图则是滤出来的龙珠果+芹菜果渣,留下的只有龙珠果、芹菜和柠檬片。

至于龙珠果+芹菜酵素的果渣,在芹菜的陪衬下,打出来的饮料还比较能够被人接受,虽然还是有被打碎的龙珠果种籽在饮料中浮浮沉沉。。。

是不是百闻不如一见?嘻嘻。。。。。。

Thanks for replying my question.
Actually, i heard about enzyme sometimes ago but to my understanding is, it taste like rotted food,therefore, i dare not try to do it. Once i taste it, then, maybe i can try it.
I like your recipes very much. Simple, nice and healthy.

the enzyme definitely tastes good, not at all like rotted food. so no worries... i try to find for you where to buy the enzyme and i found this...it is a publisher selling book on how to make sugarless enzyme (which i am very much interested to try as well)... Oasis Herbs Sdn Bhs 03-90579488...wish this helps... anyway i never try enzyme bought outside, am not sure if it tastes the same like those home-made enzyme too... glad to know that you like my recipe...

我准备做芦荟酵素、(因为我家有两棵美国品种的芦荟)又不知怎么用。我想拿来做酵素,请问芦荟需要去皮吗? 如果用芦荟和黄梨,可以吗?

hi 花花,

yes, you can use the aloe vera to make enzyme, just like what i had tried last time...first of all, peel off the skin and slice it, but it will become very juicy and "slippery"..remember, make sure it is dry and clean before you peel off its skin and slice it...wish you a success in home-made enzyme..

我是第一次做酵素,有一个星期了。
很贪心的做了两瓶。一个是火龙果,另一个是藩茄。藩茄会出现大量的白色菌在表层,火龙果只是有泡沫而已。
请问我要如何去验证酵素到底有没有成功呢?
